This easy zucchini stir fry is a quick and healthy dish that is perfect for a busy weeknight. The zucchini is cooked with a flavorful sauce and mixed with your choice of protein for a filling and satisfying meal.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Optional: protein of your choice (tofu, chicken, beef, shrimp)

Directions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and stir fry for 30 seconds until fragrant.
  3. Add the sliced bell pepper and onion, and stir fry for 2-3 minutes until slightly softened.
  4. Add the zucchini slices and continue stir frying for another 2-3 minutes.
  5. If adding protein, push the vegetables to the side of the wok and cook the protein until fully cooked.
  6. In a small bowl, mix together soy sauce, oyster sauce, and sesame oil.
  7. Pour the sauce over the vegetables and protein, and stir to coat everything evenly.
