These cauliflower nachos are a healthy twist on a classic favorite. Instead of using tortilla chips, we use roasted cauliflower as the base, topped with all the traditional nacho toppings for a tasty and satisfying snack or meal.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • Sliced jalapenos, sliced green onions, avocado, sour cream, and salsa for topping

Directions

  1. Preheat the oven to 425°F.
  2. In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and pepper until well coated.
  3. Spread the cauliflower in a single layer on a baking sheet and roast for 25-30 minutes, until slightly browned and tender.
  4. Remove the cauliflower from the oven and sprinkle with shredded cheddar cheese. Return to the oven for 5 minutes, until the cheese is melted and bubbly.
  5. Top the cauliflower with black beans, diced tomatoes, sliced olives, jalapenos, green onions, avocado, sour cream, and salsa.
