Shrimp and Tofu Soup

Ingredients

  • 1/4 pound shrimp, peeled and deveined
  • 1/2 block firm tofu, cubed
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 inch ginger, grated
  • 1/2 red bell pepper, diced
  • 1/2 cup mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 4 cups vegetable broth
  • 2 tablespoons green onion, sliced
  • 1 teaspoon chili oil

Directions

  1. Heat the sesame oil in a large pot over medium heat. Add the onion, garlic, ginger and bell pepper to the pot and cook for 2-3 minutes, stirring occasionally.
  2. Add the mushrooms and cook for another 2-3 minutes, stirring occasionally.
  3. Add the tofu, shrimp and soy sauce to the pot and cook for 3-4 minutes, stirring occasionally.
  4. Pour the vegetable broth into the pot and bring to a gentle simmer. Simmer for 10 minutes.
  5. Stir in the green onion and chili oil. Simmer for another 5 minutes.
  6. Serve the soup hot, with extra chili oil on the side for added heat.
