Heat the sesame oil in a large pot over medium heat. Add the onion, garlic, ginger and bell pepper to the pot and cook for 2-3 minutes, stirring occasionally.
Add the mushrooms and cook for another 2-3 minutes, stirring occasionally.
Add the tofu, shrimp and soy sauce to the pot and cook for 3-4 minutes, stirring occasionally.
Pour the vegetable broth into the pot and bring to a gentle simmer. Simmer for 10 minutes.
Stir in the green onion and chili oil. Simmer for another 5 minutes.
Serve the soup hot, with extra chili oil on the side for added heat.
