Grandaddy's Sweet Potato Meringue Pie

Ingredients

  • 2 cups mashed sweet potato
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/3 cup butter, melted
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 9-inch unbaked pie crust
  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 3/4 cup water
  • 1/4 cup butter
  • 1/4 teaspoon almond extract
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons white sugar

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine mashed sweet potato, brown sugar, cinnamon, nutmeg, ginger, salt, melted butter, eggs, and vanilla. Mix until blended.
  3. Pour mixture into the pie crust.
  4. In a medium saucepan, combine 1/2 cup sugar, cornstarch, and water. Cook over medium heat until thickened, stirring constantly. Remove from heat and stir in 1/4 cup butter and almond extract.
  5. Pour over sweet potato mixture in the pie crust.
  6. In a medium bowl, beat egg whites until foamy. Add cream of tartar, and continue beating until stiff peaks form. Gradually beat in 6 tablespoons sugar until mixture is glossy. Spread meringue over the top of the pie.
  7. Bake in preheated oven for 15 minutes, or until golden brown.
