Ingredients
- 2 cups mashed sweet potato
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/3 cup butter, melted
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 9-inch unbaked pie crust
- 1/2 cup white sugar
- 2 tablespoons cornstarch
- 3/4 cup water
- 1/4 cup butter
- 1/4 teaspoon almond extract
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 6 tablespoons white sugar
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine mashed sweet potato, brown sugar, cinnamon, nutmeg, ginger, salt, melted butter, eggs, and vanilla. Mix until blended.
- Pour mixture into the pie crust.
- In a medium saucepan, combine 1/2 cup sugar, cornstarch, and water. Cook over medium heat until thickened, stirring constantly. Remove from heat and stir in 1/4 cup butter and almond extract.
- Pour over sweet potato mixture in the pie crust.
- In a medium bowl, beat egg whites until foamy. Add cream of tartar, and continue beating until stiff peaks form. Gradually beat in 6 tablespoons sugar until mixture is glossy. Spread meringue over the top of the pie.
- Bake in preheated oven for 15 minutes, or until golden brown.
