Ingredients

  • 1 pound of medium shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 red onion, diced
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of cilantro, finely chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lime juice
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ground cumin
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the shrimp, avocado, red onion, tomatoes, cucumber, bell pepper, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, garlic powder, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve the salad immediately, or refrigerate until ready to serve.
