Ingredients
- 1 large eggplant, thinly sliced
- 1 large tomato, thinly sliced
- 1/2 cup grated cheese (your choice)
- 1/2 cup ricotta cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Directions
- Preheat oven to 400 degrees F.
- In a small bowl, mix together garlic, basil, olive oil, salt and pepper.
- Lay half of the eggplant slices on a baking sheet. Spread the garlic-basil mixture over the eggplant slices.
- Layer tomato slices over the eggplant, then top with remaining eggplant slices.
- Spread ricotta cheese over the top of the eggplant.
- Sprinkle with grated cheese.
- Bake in preheated oven for 15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil and serve warm.
