Ingredients

  • 3 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons butter, divided
  • 1/2 cup cooked seafood, such as shrimp, crab, or scallops
  • 1/4 cup shredded cheese
  • 1/4 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Directions

  1. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat 1 tablespoon butter in a large skillet over medium heat. Add egg mixture and cook, stirring occasionally, until eggs are set and cooked through, about 5 minutes.
  3. In a small bowl, combine seafood, shredded cheese, cream cheese, sour cream, and Parmesan cheese. Spread mixture over cooked eggs and cook for 2 minutes, until cheese is melted.
  4. Remove from heat and top with remaining butter and parsley. Serve warm.
