1/2 cup cooked seafood, such as shrimp, crab, or scallops
1/4 cup shredded cheese
1/4 cup cream cheese
1/4 cup sour cream
1/4 cup shredded Parmesan cheese
1 tablespoon chopped fresh parsley
Directions
In a medium bowl, whisk together eggs, milk, salt, and pepper.
Heat 1 tablespoon butter in a large skillet over medium heat. Add egg mixture and cook, stirring occasionally, until eggs are set and cooked through, about 5 minutes.
In a small bowl, combine seafood, shredded cheese, cream cheese, sour cream, and Parmesan cheese. Spread mixture over cooked eggs and cook for 2 minutes, until cheese is melted.
Remove from heat and top with remaining butter and parsley. Serve warm.
