Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and drained
  • 1/2 cup Gruyere cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs

Directions

  1. Preheat oven to 350°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the spinach and cook for another 5 minutes, stirring occasionally.
  4. Remove from heat and mix in the Gruyere cheese, salt, and pepper.
  5. Transfer the mixture to an oven-safe baking dish and top with the breadcrumbs.
  6. Bake for 15 minutes, or until the cheese is melted and bubbly.
  7. Serve warm.
