Ingredients
- 1 block of firm tofu, diced
- 1 red bell pepper, diced
- 1 cup of snow peas, sliced
- 1/4 cup of sliced scallions
- 1/2 cup of edamame, shelled
- 1/4 cup of chopped cilantro
- 1/4 cup of sesame oil
- 2 tablespoons of rice vinegar
- 1 tablespoon of soy sauce
- 1 teaspoon of sugar
- 1 teaspoon of sesame seeds
Directions
- In a large bowl, combine the tofu, bell pepper, snow peas, scallions, edamame, and cilantro. Toss to combine.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, sugar, and sesame seeds to make a vinaigrette. Pour over the tofu mixture and toss to combine.
- Serve the salad chilled or at room temperature.
