Ingredients

  • 1 block of firm tofu, diced
  • 1 red bell pepper, diced
  • 1 cup of snow peas, sliced
  • 1/4 cup of sliced scallions
  • 1/2 cup of edamame, shelled
  • 1/4 cup of chopped cilantro
  • 1/4 cup of sesame oil
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sugar
  • 1 teaspoon of sesame seeds

Directions

  1. In a large bowl, combine the tofu, bell pepper, snow peas, scallions, edamame, and cilantro. Toss to combine.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, sugar, and sesame seeds to make a vinaigrette. Pour over the tofu mixture and toss to combine.
  3. Serve the salad chilled or at room temperature.
