Ingredients

  • 1 cup of baby spinach
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of diced red onion
  • 1/2 medium cucumber, diced
  • 1/4 cup of feta cheese
  • 1/4 cup of sliced almonds
  • 1/4 cup of dried cranberries
  • 1/4 cup of fresh blueberries
  • 2 tablespoons of extra-virgin olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • 1 tablespoon of honey
  • 1 tablespoon of chopped fresh dill
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper

Directions

  1. In a large bowl, combine the spinach, tomatoes, red onion, cucumber, feta cheese, almonds, and cranberries. Toss to combine.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, dill, salt, and pepper. Pour over the salad and toss to combine.
  3. Add the blueberries to the salad and toss to combine. Serve immediately.
