Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, chopped
  • 1 cup walnuts, chopped
  • 1/3 cup breadcrumbs
  • 1/4 cup oats
  • 1/4 cup parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat oven to 350°F.
  2. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the mushrooms and cook until lightly browned, about 5 minutes.
  4. Remove from heat and let cool for 10 minutes.
  5. In a large bowl, combine the mushroom mixture, walnuts, breadcrumbs, oats, parsley, oregano, basil, thyme, salt, and pepper.
  6. Stir until well combined.
  7. Transfer the mixture to a 9-inch loaf pan.
  8. Bake for 45-50 minutes, or until lightly golden brown.
  9. Let cool for 10 minutes before serving.
