Ingredients
1 tablespoon olive oil
1 small onion, finely chopped
3 cloves garlic, minced
2 cups mushrooms, chopped

Directions
Preheat oven to 350°F.

In a large bowl, combine the mushroom mixture, walnuts, breadcrumbs, oats, parsley, oregano, basil, thyme, salt, and pepper.
Stir until well combined.
Transfer the mixture to a 9-inch loaf pan.
Bake for 45-50 minutes, or until lightly golden brown.
Let cool for 10 minutes before serving.
