  • 1 pound fresh brussels sprouts
  • 1 tablespoon olive oil

  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 cup crumbled feta cheese
  • 1 egg, beaten for egg wash

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the brussels sprouts and remove any yellow outer leaves. Cut them in half.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  4. Add the minced garlic and dried thyme to the skillet. Cook for an additional minute.
  5. Add the brussels sprouts to the skillet and season with salt and pepper. Cook for 5-7 minutes until they are tender-crisp.
  6. Remove the skillet from heat and let the brussels sprouts cool slightly.
  7. On a lightly floured surface, unfold the thawed puff pastry sheet.
  8. Spread the cooked brussels sprouts evenly on top of the puff pastry, leaving a small border around the edges.

  10. Starting from one edge, carefully roll the pastry into a log shape.
