Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
Heat olive oil in a skillet over medium heat. Saute onion, garlic, zucchini, squash, bell pepper and mushrooms until tender.
In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, Italian seasoning, salt and pepper. Mix well.
Spread 1/2 cup of ricotta cheese mixture in the bottom of a 9x13 inch baking dish.
Layer with 3 lasagna noodles, 1/2 of the vegetables and 1 cup of mozzarella cheese.
Repeat layers, and top with remaining ricotta cheese mixture, mozzarella cheese and Parmesan cheese.
Cover with foil and bake in preheated oven for 25 minutes. Remove foil and bake an additional 25 minutes, or until cheese is melted and lightly browned.
