Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

Directions

  1. In a medium bowl, combine the olive oil, cumin, chili powder, paprika, oregano, salt, and pepper.
  2. Add the shrimp, bell peppers, onion, and garlic to the bowl and mix to coat with the marinade.
  3. Preheat a grill to medium-high heat.
  4. Thread the shrimp, bell peppers, and onions onto skewers.
  5. Grill the skewers for 5-7 minutes, turning occasionally, until the shrimp is cooked through and the vegetables are slightly charred.
  6. Serve immediately with warm tortillas, salsa, guacamole, and cilantro.
