Ingredients
- 3/4 cup granulated sugar
- 2 tablespoons light corn syrup
- 2 tablespoons cold water
- 1/4 cup rose water
- 2 teaspoons lemon juice
- 1/4 teaspoon cream of tartar
- 1/4 cup confectioners’ sugar, sifted
- 1/2 cup chopped pistachios
- 1/4 cup dried cranberries
Directions
- In a medium saucepan, combine the sugar, corn syrup, cold water, rose water, lemon juice, and cream of tartar. Place over medium-high heat and stir until the sugar is dissolved.
- Bring the mixture to a boil and cook for 10 minutes, stirring occasionally.
- Line an 8-inch square baking pan with parchment paper. Pour the hot syrup into the pan and let cool for 10 minutes.
- Sprinkle the confectioners’ sugar, pistachios, and dried cranberries over the top of the syrup. Gently press them down into the syrup with a rubber spatula.
- Let the mixture cool for at least 2 hours before cutting into squares.
