Ingredients

  • 1 block extra firm tofu, drained and pressed
  • 2 tablespoons vegan butter
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup nutritional yeast
  • 1/4 cup vegan cheese, shredded
  • 4 slices vegan toast

Directions

  1. Heat vegan butter in a large skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
  2. Add drained and pressed tofu to the pan and break it up with a wooden spoon. Cook until lightly browned, about 3 minutes.
  3. Stir in onion powder, turmeric, smoked paprika, black pepper, and salt. Cook for another minute.
  4. Stir in nutritional yeast and vegan cheese. Cook until cheese is melted and everything is combined, about 2 minutes.
  5. Toast vegan toast. Assemble sandwiches by topping each slice with the tofu scramble.
  6. Enjoy immediately!
