Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1/2 cup shredded cheese
  • 1/2 cup black beans
  • 1/2 cup cooked corn
  • 1/4 cup diced tomatoes
  • 1/4 cup diced jalapenos
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives
  • 16-20 nacho chips

Directions

  1. Preheat oven to 400 degrees F.
  2. Cut chicken into bite-sized pieces and place in a bowl. Add taco seasoning, olive oil, garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and pepper. Mix until chicken is evenly coated.
  3. Spread chicken on a baking sheet lined with parchment paper and bake for 20 minutes, or until chicken is cooked through.
  4. To assemble the nachos, spread nacho chips on a plate or baking sheet.
  5. Top with cooked chicken, salsa, sour cream, cheese, black beans, cooked corn, tomatoes, jalapenos, red onion, and black olives.
  6. Bake for 10 minutes, or until cheese is melted and bubbly.
  7. Garnish with cilantro and serve immediately.
