Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon taco seasoning
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup salsa
- 1/4 cup sour cream
- 1/2 cup shredded cheese
- 1/2 cup black beans
- 1/2 cup cooked corn
- 1/4 cup diced tomatoes
- 1/4 cup diced jalapenos
- 1/4 cup diced red onion
- 1/4 cup sliced black olives
- 16-20 nacho chips
Directions
- Preheat oven to 400 degrees F.
- Cut chicken into bite-sized pieces and place in a bowl. Add taco seasoning, olive oil, garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and pepper. Mix until chicken is evenly coated.
- Spread chicken on a baking sheet lined with parchment paper and bake for 20 minutes, or until chicken is cooked through.
- To assemble the nachos, spread nacho chips on a plate or baking sheet.
- Top with cooked chicken, salsa, sour cream, cheese, black beans, cooked corn, tomatoes, jalapenos, red onion, and black olives.
- Bake for 10 minutes, or until cheese is melted and bubbly.
- Garnish with cilantro and serve immediately.
