Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 pound ground turkey
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup uncooked long-grain white rice
- 1/2 cup dried cranberries
Directions
- Set the Instant Pot to the "saute" setting.
- Add the oil, onion, carrots, and celery. Saute until the vegetables are lightly browned, about 5 minutes.
- Add the ground turkey and season with salt, pepper, thyme, and sage. Saute until the turkey is cooked through, about 10 minutes.
- Add the garlic and saute for 1 minute.
- Stir in the chicken broth and uncooked rice. Close the lid and set the pressure release valve to "sealing".
- Press the "manual" button and adjust the time to 8 minutes.
- When the timer is done, quick release the pressure and open the lid.
- Stir in the dried cranberries and serve.
