Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 pound ground turkey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup uncooked long-grain white rice
  • 1/2 cup dried cranberries

Directions

  1. Set the Instant Pot to the "saute" setting.
  2. Add the oil, onion, carrots, and celery. Saute until the vegetables are lightly browned, about 5 minutes.
  3. Add the ground turkey and season with salt, pepper, thyme, and sage. Saute until the turkey is cooked through, about 10 minutes.
  4. Add the garlic and saute for 1 minute.
  5. Stir in the chicken broth and uncooked rice. Close the lid and set the pressure release valve to "sealing".
  6. Press the "manual" button and adjust the time to 8 minutes.
  7. When the timer is done, quick release the pressure and open the lid.
  8. Stir in the dried cranberries and serve.
