Ingredients
2 tablespoons vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin

2 cups long-grain basmati rice

Directions
Heat the vegetable oil in a large saucepan over medium heat.
Add the onion and garlic and cook, stirring, until the onion is softened, about 5 minutes.
Add the cumin, coriander, turmeric, cardamom, and cinnamon and cook, stirring, for 1 minute.
Add the rice and stir to coat with the spices. Add the broth or water and bring to a boil.
Reduce the heat to low, cover, and simmer for 20 minutes.
Stir in the raisins, almonds, and cilantro, cover, and cook until the rice is tender, about 10 minutes.
Remove from the heat and let stand, covered, for 10 minutes before serving.
