Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 2 cups long-grain basmati rice
- 4 cups vegetable broth or water
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 2 tablespoons chopped fresh cilantro
Directions
- Heat the vegetable oil in a large saucepan over medium heat.
- Add the onion and garlic and cook, stirring, until the onion is softened, about 5 minutes.
- Add the cumin, coriander, turmeric, cardamom, and cinnamon and cook, stirring, for 1 minute.
- Add the rice and stir to coat with the spices. Add the broth or water and bring to a boil.
- Reduce the heat to low, cover, and simmer for 20 minutes.
- Stir in the raisins, almonds, and cilantro, cover, and cook until the rice is tender, about 10 minutes.
- Remove from the heat and let stand, covered, for 10 minutes before serving.
