Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups cooked and mashed sweet potatoes
1/2 cup melted butter
2/3 cup white sugar
2 eggs
1/2 cup chopped pecans
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a medium bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large bowl, mix together the sweet potatoes, melted butter, sugar, and eggs. Add the dry ingredients and stir until just combined.
Fold in the pecans. Pour the batter into the prepared pan.
Bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Allow to cool for 10 minutes before removing from the pan.
