Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups cooked and mashed sweet potatoes
- 1/2 cup melted butter
- 2/3 cup white sugar
- 2 eggs
- 1/2 cup chopped pecans
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a medium bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, mix together the sweet potatoes, melted butter, sugar, and eggs. Add the dry ingredients and stir until just combined.
- Fold in the pecans. Pour the batter into the prepared pan.
- Bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow to cool for 10 minutes before removing from the pan.
