Ingredients
- 1 9-inch unbaked pie crust
- 3 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter, melted
- 1 egg, beaten
- 1 tablespoon heavy cream
- 1 tablespoon raw sugar (for topping)
Directions
- Preheat oven to 375F.
- In a medium bowl, mix together the blueberries, sugar, cornstarch, cinnamon, and lemon juice. Set aside.
- Place the pie crust into a 9-inch pie dish. Pour the blueberry mixture into the crust and spread evenly.
- In a small bowl, mix together the melted butter, egg, and cream. Brush the mixture over the top of the pie.
- Sprinkle the raw sugar over the top of the pie.
- Bake in preheated oven for 40-45 minutes, or until crust is golden brown and filling is bubbly.
- Allow the pie to cool before serving.
