- Juice of 1 lemon
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Directions
- Preheat the oven to 400°F (200°C).
- Place the cherry tomatoes on a baking sheet and drizzle with 2 tablespoons of olive oil. Season with salt and pepper. Roast in the oven for 15-20 minutes, or until the tomatoes are soft and slightly caramelized.
- While the tomatoes are roasting, heat a grill pan or outdoor grill over medium-high heat. Brush the corn with 1 tablespoon of olive oil and season with salt and pepper. Grill the corn for 8-10 minutes, turning occasionally, until it is charred and tender. Remove from heat and let cool.

- Add the shrimp to the large bowl with the corn. Pour half of the dressing over the shrimp and corn and toss to coat. Let it marinate for 5 minutes.
- Heat a grill pan or skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, until they are pink and cooked through. Remove from heat.
