Roasted Tomato, Avocado, and Fresh Mozzarella Crostini

Ingredients

  • 1 baguette, sliced into 1/2 inch thick slices
  • 3 Roma tomatoes, sliced in half
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 avocado, sliced
  • 4 ounces fresh mozzarella, sliced
  • 2 tablespoons balsamic glaze
  • Fresh basil leaves, for garnish

Directions

  1. Preheat oven to 400°F. Place the baguette slices on a baking sheet.
  2. Place the tomatoes on the baking sheet and drizzle with 2 tablespoons of the olive oil. Sprinkle with oregano, salt, and pepper.
  3. Bake for 15 minutes, until the tomatoes are softened and lightly browned.
  4. Remove the tomatoes from the oven and reduce the heat to 350°F.
  5. Top the baguette slices with the roasted tomatoes, avocado slices, and mozzarella slices.
  6. Drizzle the remaining 1 tablespoon of olive oil over the crostini.
  7. Bake for 10-15 minutes, until the cheese is melted and the bread is lightly toasted.
  8. Drizzle with balsamic glaze and garnish with fresh basil leaves.
