Ingredients

  • 2 pounds boneless pork loin, cut into 1-inch cubes
  • 2 cups sliced mushrooms
  • 1 cup pearl barley
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups chicken broth

Directions

  1. Place the pork, mushrooms, barley, onion, garlic, thyme, rosemary, salt, and pepper in the slow cooker.
  2. Pour the chicken broth over the ingredients and stir to combine.
  3. Cover and cook on low for 8 hours.
  4. Stir and season with additional salt and pepper, if desired.
  5. Serve warm.
