Rinse the rice and lentils in a sieve under running water until the water runs clear. Set aside.
Set the Instant Pot to sauté mode. Add the ghee or oil and cumin seeds. When the cumin seeds begin to sizzle, add the chopped onions and sauté until the onions are lightly browned.
Add the ginger-garlic paste and sauté for a few seconds. Then add the chili powder, turmeric powder and salt. Sauté for a few more seconds.
Add the rice and lentils and stir to combine. Pour in the water and stir to combine. Close the lid, set the Instant Pot to Manual/Pressure Cook mode and cook on high pressure for 5 minutes.
Once the cooking time is done, turn off the Instant Pot and let the pressure release naturally. Open the lid and stir the khichdi. Garnish with fresh coriander leaves and serve hot.
