Ingredients

  • 3 large potatoes, peeled and cut into cubes
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 tablespoon of dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together the potatoes, onion, garlic, olive oil, rosemary, salt and pepper.
  3. Spread the mixture onto a large baking sheet and bake in the preheated oven for 40-50 minutes, stirring occasionally, until the potatoes are tender and golden brown.
  4. Serve immediately.
