Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (8 oz.) can tomato sauce
  • 1 (8 oz.) can diced tomatoes
  • 1 (8 oz.) can corn, drained
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can black beans, drained
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup crushed tortilla chips

Directions

  1. Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is no longer pink. Drain fat.
  3. Add tomato sauce, diced tomatoes, corn, green chiles, black beans, chili powder, cumin, salt, and pepper to the skillet. Stir to combine.
  4. Spread beef mixture into the bottom of the prepared baking dish.
  5. Sprinkle the cheese over the beef mixture.
  6. Sprinkle the crushed tortilla chips over the cheese.
  7. Bake for 25-30 minutes, until cheese is melted and bubbly.

Interesting Facts

  • This casserole can be made ahead of time and stored in the refrigerator until ready to bake.
  • To add more flavor, try adding a few tablespoons of chopped fresh cilantro.
  • This casserole can also be made in individual ramekins or baking dishes.
