Ingredients
- 1 lb. ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 (8 oz.) can tomato sauce
- 1 (8 oz.) can diced tomatoes
- 1 (8 oz.) can corn, drained
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can black beans, drained
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded Mexican cheese blend
- 1/2 cup crushed tortilla chips
Directions
- Preheat oven to 350°F. Grease a 9x13-inch baking dish.
- In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is no longer pink. Drain fat.
- Add tomato sauce, diced tomatoes, corn, green chiles, black beans, chili powder, cumin, salt, and pepper to the skillet. Stir to combine.
- Spread beef mixture into the bottom of the prepared baking dish.
- Sprinkle the cheese over the beef mixture.
- Sprinkle the crushed tortilla chips over the cheese.
- Bake for 25-30 minutes, until cheese is melted and bubbly.

- This casserole can be made ahead of time and stored in the refrigerator until ready to bake.
- To add more flavor, try adding a few tablespoons of chopped fresh cilantro.
