Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • 1 cup cream
  • 1/3 cup smoked fish
  • 1/3 cup frozen peas
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 2 tablespoons grated parmesan cheese
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the oil over medium heat.
  3. Add the onion and garlic and cook, stirring often, until softened, about 5 minutes.
  4. Stir in the flour and cook, stirring constantly, until the flour is golden, about 2 minutes.
  5. Add the broth and cream and cook, stirring constantly, until the mixture is thickened, about 5 minutes.
  6. Add the smoked fish, peas, pepper, paprika, and thyme and cook, stirring occasionally, for 2 minutes.
  7. Stir in the Parmesan cheese.
  8. Transfer the mixture to a 9-inch pie dish.
  9. Cut the puff pastry into a 10-inch round and place it over the filling.
  10. Crimp the edges of the pastry and brush with the egg.
  11. Bake until the pastry is golden brown, about 30 minutes.
