- 1 sheet frozen puff pastry, thawed
- 1 egg, beaten
Directions
- Preheat the oven to 375°F.
- In a large skillet, heat the oil over medium heat.
- Add the onion and garlic and cook, stirring often, until softened, about 5 minutes.
- Stir in the flour and cook, stirring constantly, until the flour is golden, about 2 minutes.
- Add the broth and cream and cook, stirring constantly, until the mixture is thickened, about 5 minutes.
- Add the smoked fish, peas, pepper, paprika, and thyme and cook, stirring occasionally, for 2 minutes.
- Stir in the Parmesan cheese.
- Transfer the mixture to a 9-inch pie dish.
- Cut the puff pastry into a 10-inch round and place it over the filling.
- Crimp the edges of the pastry and brush with the egg.
- Bake until the pastry is golden brown, about 30 minutes.
