Ingredients

  • 1 (4-5 pound) pork roast
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup vegetable oil
  • 2 cups chicken broth

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix together the salt, garlic powder, onion powder, oregano, thyme, and pepper. Rub the mixture all over the pork roast.
  3. Heat the vegetable oil in a large oven-proof skillet over medium-high heat. Add the pork roast to the skillet and brown on all sides, about 7 minutes.
  4. Pour the chicken broth into the skillet. Cover the skillet and transfer to the preheated oven. Roast for 1 hour and 30 minutes, or until the internal temperature of the roast reaches 145 degrees F (63 degrees C).
  5. Remove the pork roast from the oven, and let rest for 10 minutes before slicing and serving.
