Ingredients
- 1 lb. boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pint of cherry or grape tomatoes
Directions
- Preheat oven to 375 degrees F.
- In a large bowl, combine olive oil, balsamic vinegar, garlic powder, thyme, oregano, salt, and pepper to create marinade.
- Add chicken to the bowl and coat with marinade. Let sit for 10 minutes.
- Place chicken on a baking sheet lined with foil. Arrange tomatoes around chicken.
- Roast in preheated oven for 20 minutes, or until chicken is cooked through and tomatoes are tender.
- Serve warm with a side of your favorite vegetables.
