Ingredients

  • 1 cup of melted butter
  • 1 cup of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of shredded coconut
  • 1/2 cup of dried cranberries
  • 1/2 cup of chopped pecans

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, cream together the butter and sugar.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture.
  5. Stir in the coconut, cranberries, and pecans.
  6. Spread the dough into a greased 9x13 inch baking dish.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Let cool before cutting into bars.
