Ingredients
- 1 head of white cabbage, chopped
- 1 teaspoon of caraway seeds
- 1 teaspoon of juniper berries
- 1 tablespoon of salt
- 1 tablespoon of sugar
Directions
- In a large bowl, mix together the chopped cabbage, caraway seeds, juniper berries, salt, and sugar.
- Using your hands, massage the mixture for 5 minutes.
- Transfer the mixture to a large jar or crock, making sure to tamp it down to remove any air pockets.
- Cover the jar/crock with a lid or piece of cheesecloth and let sit at room temperature for 1 hour.
- Check the mixture every hour for the next 4 hours. If the liquid rises above the cabbage, press down with a spoon or spatula to remove any air pockets.
- After 5 hours, transfer the mixture to the refrigerator and let sit for at least 24 hours before serving.
