Ingredients

  • 1 head of white cabbage, chopped
  • 1 teaspoon of caraway seeds
  • 1 teaspoon of juniper berries
  • 1 tablespoon of salt
  • 1 tablespoon of sugar

Directions

  1. In a large bowl, mix together the chopped cabbage, caraway seeds, juniper berries, salt, and sugar.
  2. Using your hands, massage the mixture for 5 minutes.
  3. Transfer the mixture to a large jar or crock, making sure to tamp it down to remove any air pockets.
  4. Cover the jar/crock with a lid or piece of cheesecloth and let sit at room temperature for 1 hour.
  5. Check the mixture every hour for the next 4 hours. If the liquid rises above the cabbage, press down with a spoon or spatula to remove any air pockets.
  6. After 5 hours, transfer the mixture to the refrigerator and let sit for at least 24 hours before serving.
