Ingredients

  • 1 cup brown rice
  • 1/2 cup green lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, combine the brown rice and green lentils with 4 cups of water.
  2. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 25 minutes.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the onions, carrots, garlic, cumin, oregano, salt, and pepper and sauté until the vegetables are tender, about 10 minutes.
  5. Once the rice and lentils have cooked, add them to the skillet with the vegetables and stir to combine.
  6. Continue cooking over medium heat, stirring occasionally, until the mixture is heated through, about 10 minutes.
  7. Serve warm.
