Ingredients
- 4 chicken thighs
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 potatoes, diced

Directions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

- Remove the chicken from the skillet and set aside.
- Add the onion, garlic, bell pepper, and potatoes to the skillet and cook for 5 minutes, stirring occasionally.
- Add the tomato paste, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.
- Return the chicken to the skillet and cook for an additional 15 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley and serve warm.
