Ingredients

  • 4 cups diced watermelon
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 3 packets unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup boiling water

Directions

  1. In a blender, puree the diced watermelon until smooth.
  2. Strain the watermelon juice through a fine-mesh sieve into a saucepan.
  3. Add the granulated sugar and fresh lemon juice to the saucepan.
  4. Heat the mixture over medium heat until the sugar dissolves, stirring occasionally.
  5. Remove the saucepan from the heat.
  6. Meanwhile, in a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to soften.
  7. After 5 minutes, add the boiling water to the gelatin mixture and stir until completely dissolved.
  8. Pour the gelatin mixture into the saucepan with the watermelon juice and stir well to combine.
  9. Allow the mixture to cool for about 10 minutes.
  10. Pour the cooled mixture into silicone molds or a baking dish.
  11. Refrigerate for at least 2 hours, or until set.
  12. Once set, remove the jellies from the molds or cut them into squares if using a baking dish.
  13. Serve the watermelon jellies chilled and enjoy!
