Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth

Directions

  1. Rinse the quinoa under cold water and drain well.
  2. In a medium pot, bring the vegetable broth to a boil and add the quinoa. Reduce the heat to low, cover, and let it simmer for 15 minutes or until the quinoa is cooked and fluffy. Set aside.
