Ingredients

  • 4 bone-in pork chops
  • 2 tablespoons olive oil
  • 1 onion, sliced

  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Season the pork chops with salt and black pepper on both sides.
  3. Heat the olive oil in a large ovenproof skillet over medium-high heat.
  4. Add the pork chops and sear for 3-4 minutes on each side until browned. Remove the pork chops from the skillet and set aside.
  5. In the same skillet, add the onion and garlic. Sauté until the onion is softened, about 5 minutes.
  6. Add the red wine, beef broth, tomato paste, Worcestershire sauce, brown sugar, and dried thyme to the skillet. Stir to combine.
  7. Return the pork chops to the skillet and spoon the sauce over them. Cover the skillet with a lid or aluminum foil.
  8. Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the pork chops are cooked through and tender.
  9. Remove the skillet from the oven and let the pork chops rest for a few minutes before serving.
