Ingredients

  • 2 pounds ripe tomatoes, chopped
  • 2 bell peppers (red, yellow or orange), seeds removed and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic and sauté until they become soft and fragrant.
  3. Add the chopped bell peppers and cook for another 3-4 minutes.
  4. Add the chopped tomatoes and vegetable broth to the pot.
  5. Bring the mixture to a boil and then reduce the heat to low.
