Ingredients

  • 1 small head red cabbage, shredded
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley

Directions

  1. In a large bowl, combine the cabbage, lemon juice, olive oil, sugar, salt, and pepper. Toss until the cabbage is evenly coated.
  2. Transfer the salad to a serving bowl and sprinkle with the parsley. Serve immediately.
