Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes, undrained
  • 2 cans (15.5 ounces each) red kidney beans, rinsed and drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 package (16 ounces) spaghetti
  • Grated Parmesan cheese (optional)

Directions

  1. Heat oil in a large saucepan over medium-high heat. Add onion and garlic; cook and stir until softened, about 5 minutes.
  2. Stir in tomatoes, beans, Italian seasoning, salt and pepper. Bring to a boil; reduce heat and simmer for 15 minutes.
  3. Meanwhile, cook spaghetti according to package directions; drain.
  4. To serve, top spaghetti with red beans and sauce; sprinkle with Parmesan cheese if desired.
