Ingredients

  • 1/4 cup dry-roasted unsalted cashews
  • 1/4 cup olive oil
  • 1 teaspoon mild curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 2 ripe pears, cored and diced
  • 1 cup seedless grapes, halved
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey

Directions

  1. In a small bowl, stir together the cashews, olive oil, curry powder, cumin, coriander, turmeric, ginger, and sea salt.
  2. In a large bowl, combine the pears, grapes, cilantro, lemon juice, and honey. Stir to combine.
  3. Add the cashew mixture to the pear mixture and mix until everything is evenly coated.
