Ingredients
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced

Directions
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, celery, and bell pepper. Cook, stirring often, for 5 minutes.
Add oregano, basil, salt and pepper, and stir to combine. Cook for 1 minute.
Add diced tomatoes and vegetable broth. Bring to a boil over high heat, then reduce heat to low and simmer for 15 minutes.
Add cannellini beans and spinach. Simmer for 5 more minutes, or until the vegetables are tender.
Serve warm.
