Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped almonds
- 1 cup dried cranberries
Directions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, until combined. Add the vanilla extract and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Add the almonds and cranberries and mix until just combined.
- Divide the dough into two equal pieces and shape into logs, about 12 inches long and 2 inches wide. Place on the prepared baking sheet and bake for 35-40 minutes, or until golden brown.
- Remove from oven and let cool for 10 minutes. Cut the logs into 1-inch slices and place them cut-side down on the baking sheet. Bake for an additional 10 minutes, or until lightly golden brown.
- Remove from oven and let cool completely before serving.
