Ingredients
- 1 tablespoon butter
- 1 onion, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups diced cooked ham
- 1 teaspoon dried thyme
- Salt and pepper to taste
Directions
- Melt butter in a large pot over medium heat.
- Add onion and celery and cook until softened, about 4 minutes.
- Add garlic and cook until fragrant, about 1 minute.
- Add potatoes, chicken broth, heavy cream, diced ham, thyme, salt and pepper.
- Bring to a boil, reduce heat to low and simmer for 10 minutes, or until potatoes are tender.
- Serve warm.
