Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1/4 cup vegetable broth

Directions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and garlic, and cook until softened, about 5 minutes. Add bell peppers, chili powder, smoked paprika, cumin, oregano, salt, and pepper. Cook until fragrant, about 2 minutes.
  3. Add beans, tomatoes, and vegetable broth. Stir to combine. Bring to a simmer and cook for 5 minutes.
  4. Transfer skillet to preheated oven and bake for 25 minutes, until bubbling and lightly browned on the top.
  5. Serve hot.
