Ingredients
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups broccoli florets
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- 3/4 cup dry orzo pasta
- 2 cups vegetable broth
- 2 tablespoons lemon juice
- 1/4 cup freshly grated Parmesan cheese, plus more for topping
Directions
- Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, bell pepper, mushrooms, and broccoli and cook until the vegetables have softened, about 5 minutes.
- Add the oregano, basil, thyme, red pepper flakes, salt, and pepper and cook for another 2 minutes.
- Add the orzo and vegetable broth and bring to a boil. Reduce the heat and simmer until the orzo is cooked, about 8 minutes.
- Stir in the lemon juice and Parmesan cheese. Cook for another 2 minutes, stirring occasionally.
- Garnish with additional Parmesan cheese, if desired, and serve.
