Directions
Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, bell pepper, mushrooms, and broccoli and cook until the vegetables have softened, about 5 minutes.
Add the oregano, basil, thyme, red pepper flakes, salt, and pepper and cook for another 2 minutes.
Add the orzo and vegetable broth and bring to a boil. Reduce the heat and simmer until the orzo is cooked, about 8 minutes.
Stir in the lemon juice and Parmesan cheese. Cook for another 2 minutes, stirring occasionally.
Garnish with additional Parmesan cheese, if desired, and serve.
