Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups broccoli florets
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 3/4 cup dry orzo pasta
  • 2 cups vegetable broth
  • 2 tablespoons lemon juice
  • 1/4 cup freshly grated Parmesan cheese, plus more for topping

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, bell pepper, mushrooms, and broccoli and cook until the vegetables have softened, about 5 minutes.
  2. Add the oregano, basil, thyme, red pepper flakes, salt, and pepper and cook for another 2 minutes.
  3. Add the orzo and vegetable broth and bring to a boil. Reduce the heat and simmer until the orzo is cooked, about 8 minutes.
  4. Stir in the lemon juice and Parmesan cheese. Cook for another 2 minutes, stirring occasionally.
  5. Garnish with additional Parmesan cheese, if desired, and serve.
