Ingredients

  • 1 cup lentils
  • 1 cup white basmati rice
  • 2 tablespoons vegetable oil
  • 1 large onion, thinly sliced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Hot sauce, for serving (optional)

Directions

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Add the lentils and stir. Cover the pan and reduce the heat to low. Simmer for 15 minutes.
  3. Add the rice and stir. Cover the pan and cook for an additional 15 minutes, or until the lentils and rice are both cooked through.
  4. In a separate skillet, heat the oil over medium heat. Add the onion and sauté for 5 minutes, or until golden brown.
  5. Stir in the cumin, coriander, turmeric, salt, and pepper. Cook for an additional minute, stirring constantly.
  6. Add the onion mixture to the lentils and rice and stir to combine. Serve hot, with hot sauce on the side.
