Ingredients

  • 2 Cornish hens
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1/2 cup chopped leeks
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place the hens in a roasting pan.
  3. In a small bowl, mix together the olive oil, garlic, lemon juice, leeks, thyme, and rosemary. Pour the mixture over the hens.
  4. Sprinkle with salt and pepper.
  5. Roast in preheated oven for 45 minutes, or until the juices run clear and the hens are golden brown.
