Ingredients
- 2 Cornish hens
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1/2 cup chopped leeks
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Place the hens in a roasting pan.
- In a small bowl, mix together the olive oil, garlic, lemon juice, leeks, thyme, and rosemary. Pour the mixture over the hens.
- Sprinkle with salt and pepper.
- Roast in preheated oven for 45 minutes, or until the juices run clear and the hens are golden brown.
