Lemon Orzo Primavera
Ingredients
1 lb. penne pasta
1/2 cup feta cheese, crumbled
1/4 cup olive oil
2 cloves garlic, minced
1/4 tsp. red pepper flakes
1/4 cup fresh parsley, chopped
1/4 cup kalamata olives, pitted and sliced
1/2 cup cherry tomatoes, halved
1/2 cup red bell pepper, diced
1/2 cup yellow onion, diced
Salt and pepper to taste
Directions
Preheat oven to 375°F.
In a large pot of boiling salted water, cook the penne pasta until al dente, about 8-10 minutes.
Meanwhile, in a small bowl, mix together the feta, olive oil, garlic, red pepper flakes, and parsley. Set aside.
In a large baking dish, combine the olives, tomatoes, bell pepper, and onion. Pour the feta mixture over the vegetables and stir to combine.
Bake for 25-30 minutes, or until the vegetables are tender.
When the pasta is done cooking, drain it and add it to the baking dish. Stir to combine.
Season with salt and pepper to taste.
Serve warm.
