Ingredients
- 1/2 head of romaine lettuce, chopped
- 1/2 head of red cabbage, shredded
- 1/2 cucumber, chopped
- 1/2 red bell pepper, chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup sliced almonds
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Directions
- In a large bowl, combine the lettuce, cabbage, cucumber, bell pepper, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, garlic powder, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Sprinkle the almonds over the top of the salad and serve.
