Ingredients

  • 1/2 head of romaine lettuce, chopped
  • 1/2 head of red cabbage, shredded
  • 1/2 cucumber, chopped
  • 1/2 red bell pepper, chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup sliced almonds
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the lettuce, cabbage, cucumber, bell pepper, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle the almonds over the top of the salad and serve.
